Healthier Chicken Salad on Crackers


This meal is so light and fresh. Perfect for a summer snack or appetizer. 
I had made baked raspberry chipotle chicken a couple days ago.  I hate to waste food and we really love chicken salad sandwiches but, the traditional chicken salad sandwich is a little heavy with all that bread so I opted to use rice crackers instead. It was perfect! So yummy and fresh (of course I used fresh ingredients from my garden).

You can use any baked or grilled chicken (pretty much any spices added will be fine).

Pull it out of the refrigerator and cut it in cubes (no need to warm it).

Dice up some onions.

I grabbed some ingredients from the garden (lettuce, tomato and basil).  Feel free to add anything else you might have. Halved grapes, diced apples, crushed pecans, cilantro etc...

Dice everything up and throw it in the bowl.

Add in some mayo. Have you seen this mayo at Costco?



Mix it all up.

Hmmm... something doesn't look right.

Let's add some more tomatoes. There! Much better.

Kid approved.

We all really enjoyed them.
