Healthy Quinoa Stir Fry


As I promised. I wanted to show you guys my recipe that I make at the end of the week. I try and use up all the left over veggies before they go bad as well as the broccoli stalks (I hate to waste). Not only is this a life saver at the end of every week but it is actually one of our favorite meals that we look forward to. It goes really nice with diced chicken or on the side of a salmon entree.




This is the easiest recipe I promise:
Make your quinoa as stated on the box/bag. (I also use low sodium chicken or beef broth instead of plain water for more of a richer flavor. But you don't have to.)

While the quinoa is cooking add:
2 tablespoons of olive oil and one whole garlic clove minced to a pre-heated pan on ow to medium heat.

Start chopping up all of your vegetables and other ingredients. Throw it in the pan. Stir in some spices like ground mustard, onion powder, garlic powered, cumin, paprika etc.  Whatever sounds the best to you. I promise you can not mess this up.


When your quinoa is done add it to your pan.


Here are some ideas of vegetables to add.
carrots
broccoli
corn
black beans
chard
kale
radishes
peppers
jalapeƱo peppers (these are my favorite to add for some spice)
onions
tomatos
zucchini
squash
etc...
