Quinoa Chicken Stir Fry


Ok I have been getting a lot of requests for Quinoa recipes so here is the last quinoa dish I made that turned out soooo good that we ate it for dinner two nights in a row. Really!! Hubby and daughter approved and it is so easy you will be impressed. Also did I mention that it is a hardy and healthy dish?!



Ingredients:
Quinoa
Chicken (Skinless, Boneless)
Chicken broth
Carrots
Tomatoes
Broccoli
Soy sauce (I used low salt soy sauce)

Directions:
Prepare quinoa to exactly what it says on the box except for substitute chicken broth for water.
Dice and cook chicken thoroughly.
Dice carrots broccoli and tomatoes to bite size pieces.
Combine all ingredients in a pan and add soy sauce to your taste.

Thats it! Sooooo easy! Try this recipe in your home and tell me what you and your family think.

Ok maybe this is how I have gained so much weight with pregnancy, but at least it is with healthy food. LOL!
