This is such a wonderfully healthy recipe and the best part is that is so simple.
First you want to make the quinoa like it say to on the box. I like to add chicken broth to mine though.
Then peel the zucchini and, using a box shredder, shred the zucchini. Put about a tablespoon of butter in a frying pan and fry the shredded zucchini on medium heat for about 5 minutes. Finally you want to mix the cooked quinoa and fried zucchini together and add 1/4 cup heavy cream (if you want it to be creamy). Yummy! Serve hot with chicken of your choice.
