Curried Meatball over Quinoa for Makena

Cooking Quinoa:
2 cups of water or beef broth
1 cup of Quinoa
Bring water/broth to a boil, add quinoa. Cook for 10- 15 minutes. Quinoa seeds become translucent and uncoil like a flower.

Making the Meatballs:
1.5 lbs of thawed ground beef or ground turkey
1/2 cup fresh cilantro
1 tbls tumeric or curry powder
1/2 cup bread crumbs or crackers
1 large egg
1 teaspoon ground cumin
salt and pepper
Mix all ingredients with your hands in large bowl. Once thoroughly mixed, start forming litlle balls on a foil lined cookie sheet (make sure cookie sheet is safe for broiling). Heat broiler on high. Broil meatballs for about 10 minutes turning once. Cut a meatball in half to make sure it is fully cooked.
